Menu Monday and Other Musings



Well, hello there! I know it's been a long time since I last posted and I'm sorry for that. Thank you to everyone for your well wishes, thoughts and prayers. I am doing much better. After several tests, everything showed up as normal. I'm still trying to eat small meals like the physician's assistant suggested and that helps. I have totally cut out Diet Coke (3 months and going strong!) and limit my coffee intake to 1-2 cups a week. If I get a soft drink when we go out to eat, I get Sprite. Yay for decreasing caffeine and increasing water!


Here's my menu for the week:

Monday: Leftovers from the big Sunday meal (roast beef, mashed potatoes, homemade mac & cheese, green beans, Alexia French rolls)

Tuesday: Grilled pork chops with McCormick's Montreal Steak marinade, rice, gravy, broccoli

Wednesday: Soup (whatever is in the cabinet) and sandwiches (grilled cheese, chicken, or ham)

Thursday: Steak with McCormick's Montreal Steak marinade, baked potatoes, salad

Friday: Eat Out Friday (my mom and aunt are coming into town! Can't wait to see them!)

Saturday: Chicken wings, chips, dip, tostito's, salsa, celery (our usual fare on Saturdays for watching football)

Sunday: Leftovers or Breakfast for supper (pancakes, eggs, bacon, or whatever the masses want!)

I mentioned McCormick's Montreal Steak marinade a couple of times above. My husband and I love this stuff! It's wonderful on steaks and pork. It comes in a packet and you add water, oil, and vinegar to make the marinade. Check it out next time you decide to grill steaks!

Musings: Loving the fall weather and the changing leaves around here. It's so pretty and I love watching college football every weekend with my husband (no, it's not a joke! I really do love watching football!). My daughter's acting class and play are over, so we're looking forward to some weekends hanging out around the house and getting some projects done.

I've been on an organizing/minimizing kick lately. I fluctuate between wanting to get rid of everything and trying to save sentimental stuff and get more organized. Hopefully, I can strike a happy medium somewhere. I am trying to be more mindful of my purchases on everything from personal care items to decorations. I'm going to post pictures of some organization that my husband helped me with over the summer.

Tuesday Update

Hello, everyone! Thank you so much for your continued support and prayers. My wonderful husband has been fabulous and has taken good care of me. My 2 children have been terrific helpers.

I am still tired and feel weak. I can't really do a whole lot of anything without needing to sit down. Still trying to figure out a way to get my strength back up again. I do feel better, but just tired. I've lost a few pounds (not exactly the way I wanted to go about losing weight!). I am also almost caffeine free at this point. For the last 2 weeks or so, coffee and diet coke have not tasted good to me at all. I haven't had coffee in almost 2 weeks (I was cutting that out a lot before I got sick). I am only drinking about half of a diet coke each day. A positive side effect is that my feet aren't swelling, I've lost weight, and I'm excited to be soda-free soon.

Tomorrow morning is my heart ultrasound, so please pray that it goes well. My stress test is in late August. I truly hope I am better/stronger by then, because I know I won't be able to make it through the test feeling like I do now. My husband is going with me.

Right now, I'm afraid to drive by myself anywhere because I am so tired and can't do much. My husband has been great to drive me around. I have gone for short outings to the library and to the grocery store to pick up a few items with him. However, I haven't been able to tolerate any shopping trips or long visits anywhere.

Thursday update

Hi, everyone!

Well, I was hoping to be better today, but I'm still not doing too well. My husband was out of town this week, so I was a little spazzy about being so sick and alone with the kids. We have a wonderful group of friends and several offered to help out and one brought over a "get well" gift.

Last night (Wednesday), I thought I might have to go to the ER. I called my doctor's answering service and asked to speak to him. I was having pressure in my chest and nausea. While I was waiting for him to call back, I discovered I had not taken my blood pressure and cholesterol medication on Monday or Tuesday night. I immediately took them. The doctor was very reassuring and told me that he didn't think I needed to go to the ER, because there was nothing on the EKG on Monday to indicate that there was anything wrong with my heart. I took 2 Ibuprofen, the Zofran (anti-nausea medication), and the antibiotic. I started feeling a bit better.

My wonderful husband took an earlier flight this morning to be home to help me. He also cancelled his trip to Alabama with our church this weekend to help with rebuilding from the tornadoes. He arrived around lunch time and I am very relieved to have him here.

Today, I have had a headache that comes and goes and I think my nausea has progressed to heartburn. I'm calling the doctor tomorrow to see what I can take to help alleviate it that won't interact with my other medications. To be honest, my fear is that I am going to have a heart attack and leave behind my wonderful husband and beautiful children. I keep praying and asking God for peace and to help me with my worries, but it's been hard for me to find peace right now.

Still sick and another visit to the doctor today

Hello, everyone! I am still sick today. The antibiotics I was on last week seemed to make me sick, so the doctor called in another prescription. I was still sick over the weekend and went to see my regular doctor today (I had to go to an urgent care center on the 4th of July). He did some tests and I still have the infection and he's put me on a 3rd antibiotic, as well as medication for nausea. He has sent off bloodwork for further testing as well. I ask for your thoughts and prayers that these medications will work. I am sick of being sick!

Also, I have borderline high blood pressure. I have been on a small dose of blood pressure medication for about 3 years now and it's totally controlled (I got high blood pressure during my last pregnancy and it never went down). However, I had some chest pain/muscle spasm on the right side over the weekend. My doctor has ordered a heart ultrasound for next week and a stress test in August. I have had both of these tests in the last 1-2 years and both turned out fine. My doctor wants to be on the safe side, especially since heart disease is on both my mother's and father's side of the family. Please pray for me and for the doctors, nurses, and techs who will be helping me as we figure out what's going on.

I've been sick this week.....

So sorry that I didn't get my Menu Monday and Other Musings posted. When I got up on Monday morning, I was sick. I had to go to one of those urgent care clinics since my doctor was closed for the holiday. After seeing the doctor, I had to go to 3 pharmacies to find one open to fill my medications. Then, either one or both of my medications started making me nauseated, dizzy, and achy in my joints and lower back. They did call in a new antibiotic and I quit taking the other medication, and my stomach has settled down, but my joints and back are still hurting.

I had hoped to post some pictures of my coat closet makeover, as well as my pantry makeover. My wonderful husband put in new Elfa shelving from Container Store in both. Now, I am trying to find bins or baskets to store our hats, gloves, and scarves. I am also trying to decide how to organize the pantry. We'll be using the pantry for our china cabinet, picnic supplies, oversized pots, extra paper towels, etc. I am so excited!

If y'all know of any place that sells cute bins or baskets, let me know! I have searched Target, Container Store, and TJ Maxx/Home Good and I didn't find anything (or if I did, they only had 1 and I need 3). Thanks and I hope to get pictures posted soon!

Menu Monday and Other Musings

Hello! I hope you had a great weekend! We spent the weekend doing laundry, grocery shopping, measuring closets, and looking at blogs, catalogs, and magazines for organization inspiration.

Mr. Beach and I went to the grocery store yesterday and had a nice time together. Sort of a mini-date. It was a nice relaxing time together.

I have a better idea of menus this week, but still looking through some recipes to try out. Here's our Menu:

Monday: Grilled chicken, bow tie pasta w/ jarred alfredo sauce, salad
Tuesday: Enchiladas (trying out a recipe I found on a blog)
Wednesday: Leftover grilled chicken, baked potatoes, broccoli
Thursday: Spaghetti and meatballs, salad, bread
Friday: Eat out Friday
Saturday: Clear out the leftovers!
Sunday: Breakfast for supper (pancakes, eggs, grits, bacon - whatever anyone wants)

Last week, my menu planning went out the window by Tuesday night. I had a bad headache for 2 days (I think it was due to sinuses/allergies). I hope to do better with the menu plan this week.

Musings for the day. I am really inspired by so many others out there in the blog world. I have joined Pinterest and have had a great time finding new inspiration for organizing, paint colors, decorating, and remodelling. I am also finding a lot of inspiration from minimalist blogs. I don't think I can be a true minimalist, but I'm trying to get rid of things I don't use, love, or enjoy. I'm going to post some pics of my "in progress" organizing process for the downstairs soon. I just have to upload them.

Menu Monday and other musings

Hello! I hope everyone had a fabulous Father's Day weekend! We took it easy around here. We were happy to spend time with my wonderful husband, Mr. Beach, and let him know how much we all love him!

I am really at a loss this week on what to make for supper each night. Totally burned out on ideas. I'm going to try my best to come up with a few things, but this week might be a "fly by the seat of my pants" week as far as meal planning. Last week's menu was totally out the window by Tuesday.

So here goes:
Monday - Spaghetti and meatballs
Tuesday - Baked potatoes and salad
Wednesday - Bow tie pasta with alfredo sauce, salad
Thursday - no idea
Friday - no idea
Saturday - no idea
Sunday - no idea

See what I mean? I got nothin'. I do have food in the cabinets, fridge, and freezer, but I am just clueless on what appeals to my family and me right now. Any ideas would be welcomed!

Musings for Monday - I am really working hard on trying to get our house decluttered. It's still a disaster area around here. It is hard to declutter and reorganize and try to keep up with daily routines of laundry, meals, washing dishes, etc. However, I am going to get this done one project at a time. My problem is that I take on too much at one time and end up overwhelmed and abandoning the project. I started in the pantry on Friday, June 10th with my decluttering project. It spiraled out of control into the kitchen (have I mentioned how distractable I am?). Mr. Beach took quite a few things to Goodwill for me last week. I do have some other things that I'm trying to decide if I'll keep, sell, or donate.

I was able to return quite a few acrylic drawer organizers I had purchased about a month ago at the Container Store (thank goodness they have a great return policy and that I kept the receipt). Last month, I got on an organizing kick. Instead of decluttering first and then buying organizers, I bought organizers and later on I decluttered. The organizers were great and did a fantastic job of keeping my stuff visible, organized, and neat, but after doing a major decluttering session, I realized I didn't need them. My drawers and some of my kitchen cabinets are looking great now! My family room and kitchen island and countertops - not looking so great. Gonna work on that this week!
